Serve as a side dish or place on thin slices of toast rubbed with a halved clove of garlic for a warm open-faced sandwich.
Preheat the broiler. Lightly oil a rimmed baking sheet.
Slice horizontally into slices 1/2 to 1 inch thick:
4 large tomatoes, ripe but not too soft
Season with:
1 teaspoon salt
1/4 teaspoon ground black pepper
Place on the baking sheet and sprinkle with:
1/2 cup grated Parmesan cheese (optional)
2 tablespoons olive oil
Broil about 5 inches from the heat until golden on top and heated through, about 5 minutes. If the cheese has been omitted, serve with:
Sauce Rémoulade or Spicy Cucumber Sambal
